Most food packaging is a fight against spoilage. Spices are different, and the difference changes everything about how they should be packaged. A dry seasoning does not really spoil. Kept dry, it stays safe to eat for years. What it loses, quickly and invisibly, is the aroma, the color, and the potency that are the whole reason anyone buys it. A jar of paprika that has faded to a dull brown and lost its punch has not gone bad in any safety sense. It has just stopped being worth buying. What degrades is the sensory quality, through three mechanisms:

- Caking and clumping, from moisture. Dry powders are hygroscopic; they pull moisture from humid air. Absorbed moisture makes a powder cake, clump, and flow poorly, and in enough quantity it invites mold. Fine powders cake fastest, because their small particles take up humidity quickly. Caking is the most visible packaging failure in the category and a leading source of consumer and retailer complaints.

Opaque, metallized, or foil-based materials block the light that fades pigments, which is why the most light-sensitive spices are best in packaging you cannot see through, and why a clear window is a deliberate trade-off rather than a free feature.
- Moisture barrier prevents caking and clumping. A low water-vapor transmission rate keeps humidity out, and a reliable seal keeps it out over time. The barrier is only as good as the seal holding it, so seal integrity is as important as the film itself.
The practical work is matching the barrier to the specific product. A robust whole spice and a fine, light-sensitive, aromatic powder do not need the same structure, and over-building the barrier wastes cost while under-building it costs shelf life. The right specification comes from the product’s sensitivity, grind size, fill weight, and the shelf life and distribution the brand needs, benchmarked against real oxygen and moisture transmission targets rather than chosen from a catalog.

Do spices actually expire, or do they just lose flavor?
